For most kitchen knives, the grinding angle is between 15 and 20 degrees. The cutting angle is twice the grinding angle. The Sharp Guide 40 has a grinding angle of 40 and sharpens kitchen knives with a grinding angle of 20°.
To sharpen the other side of your knife, guide the entire length of your knife toward you.
The harder your knife is, the flatter you could sharpen the blade. We recommend continuing always with the manufacturer's sharpening angle.
