For most kitchen knives, the grinding angle is between 15 and 20 degrees. The cutting angle is twice the grinding angle. The Sharp Guide 35 has a grinding angle of 35 and sharpens kitchen knives with a grinding angle of 17,5°.
To sharpen the other side of your knife, guide the entire length of your knife toward you.
Generally: The harder your knife is, the flatter you could sharpen the blade. We recommend continuing with the manufacturer's sharpening angle.
